Almond Blueberry Muffins

Blueberry Almond Muffins

I made these muffins this morning and was really pleased with how they came out.  They are moist, tender and not too sweet.   They are gluten free, dairy free, low carb and sugar free.  They are satisfying and high in protein, omega 3’s and fiber.  These would make a great breakfast.

Blueberry Almond Muffins

1 1/2 cups raw almonds

1/2 cup flax seeds

1 T baking powder

1/4  t salt

1 1/2 t nutmeg

1 t cinnamon

5 pitted whole dates

1/2 cup melted coconut oil

1/2 cup water

4 eggs

1 cup frozen blueberries (not defrosted)

Preheat oven to 350.  In coffee grinder grind flax seeds and add to large bowl.  Then grind whole raw almonds in coffee grinder.  My coffee grinder is small so I had to do 1/2 cup at a time.  Add almonds to bowl with flax seeds.  Add baking powder, salt, nutmeg and cinnamon to almonds and flax seeds.  Mix to combine.  In a food processor add dates and water.  Process until dates are blended as much as possible (maybe 3-4 minutes).  Add eggs and oil.  Process for 10 – 15 seconds until blended.  Add wet ingredients to dry ingredients.  Stir until there are no lumps.  Let batter sit for 15 or 20 minutes to thicken.  Then fold in frozen blueberries.  Using an ice cream scoop fill 12 lined muffin tins.  Bake for 25 minutes or until center is set and toothpick comes out clean.

  1. Hi there! I was wondering if you could tell me what the equivalents would be for almond meal and flaxseed meal? I have those items in my pantry (already ground) and would love to try your recipe. Thanks so much!

    • I am just guessing at this as I have never bought the pre-ground almond or flax. I would try 2 cups of almond meal and a half cup, just as written, for the flax. Mix it up. The batter should be thick like…well muffin batter. If it still looks thin you could add a tablespoon of the flax until you get the right consistency. Just keep in mind that the flax tends to thicken in time so give it a few minutes before adding more. I tried to google a conversion for you and came up with nothing. Sorry. I hope it works out for you.
